Happy Monday everyone! Thank you so much for your kind responses to my last post about my new career in nursing. I’ve been wanting to share about my new adventure for awhile, and it’s so great hearing feedback from you and also to know that there are other nurses reading my blog. I’m hoping to share as much as I can about the process as I continue along. Right now I’m just trying to convince organic chemistry to fit inside my head even though the sun is calling me outside…
Speaking of sunny weather, it’s still July and I’m still trying to eat clean. One of my favorite lunches this past week was the one pictured below: whole wheat tortilla, laughing cow cheese (not necessarily clean, but only 35 calories), 2 eggs and sriracha sauce, with an apple on the side. Really balanced and good!!
Today’s recipe is one I’m really excited about. It is inspired yet again by Blogilates.com. I called these Clean Cookies because you can make them with only two ingredients: banana and oatmeal!
The fun part of these is that you can also spruce them up a bit if you want. I added dark chocolate chips and peanut butter. If you make them plain, I think they would be delicious with peanut butter on top, or with some berries for a very balanced breakfast.
I’m excited for these because I’m always looking for a quick/healthy breakfast that I can eat in the car on the go. I really hope you give them a try! Have a great week! <3
Makes about 4 cookies (or 6 small)

1 cup rolled oats
3 Tbsp dark chocolate chips (optional)
2-3 Tbsp peanut butter (optional)
pinch of salt (optional)
Preheat oven to 350 degrees F.
Use a food processor (or similar tool) to grind oats into a flour-like texture. Add banana slices and combine (use fingers if needed). Dough will be moist. Stir in extra ingredients if desired.
Spray a cookie sheet with cooking spray. Roll cookies into balls and press down if you desire a flatter cookie. Bake for 15 minutes. Cool on a wire rack, and enjoy!
