Inspiration for this blog comes from the most surprising places sometimes. I was reading Richard Scarry to a little one recently and came across this page:
I’d never heard of banana soup, so I looked it up online and discovered a recipe with great reviews on foodnetwork.com.
This particular version has only a few ingredients and was so easy to make. It primarily consists of bananas, coconut milk and tapioca pearls. And plenty of sugar.
I know that both bananas and coconut usually elicit extreme reactions – either you like them or you don’t. Bananas don’t bother me and I love coconut so I was prepared to like this….and I really REALLY liked it. In fact I think it’s in my personal top 10 favorite desserts I’ve made for this blog.
If you are not a banana person, you could just make coconut soup with tapioca. Absolutely delicious on its own (although I would cut out a bit of the sugar).
A couple notes on this: It is somewhat sweet, so I would start with half the sugar and then keep adding to taste. I know the color isn’t vibrant, but please don’t let that deter you from making this….just trust me.
